Paneer & Veggie Skewers

Paneer & Veggie Skewers

Ingredients:

  • 1 14 oz package of grassfed paneer (I like Gopi paneer) diced into 1/2 inch cubes

  • 2 bell peppers (any color works) diced into 1/2 inch cubes

  • 3 tbsp Pure Indian Foods curry in a hurry sauce (shop using my link and search for “Curry in a Hurry”)

  • 1/2 tsp salt

Instructions:

  1. Preheat oven to 400 degrees F.

  2. Marinate chopped paneer and bell peppers in curry in a hurry sauce by massaging sauce using hands into paneer & veggies.

  3. Let them sit for 30 minutes.

  4. Lay them on a lined baking sheet and bake in oven for 40 minutes at 400 degrees F.

  5. Remove from oven and let cool a little.

  6. Use toothpicks to pierce a pepper, followed by a paneer piece, and lastly another pepper.

  7. Line “skewers” on a tray and serve warm!
