Spicy Indian Poached Eggs (Shakshuka Inspired!)
4-5 pasture raised eggs
4-5 vine ripened tomatoes
1 small yellow onion
1/2 a yellow pepper (diced) and 1/2 a red pepper (diced)
2 tsp salt
1 tsp red chili powder
1/2 tsp turmeric powder
1 tsp cumin powder
1 inch grated ginger
2 cloves grated garlic
1/4 cup chopped cilantro for garnish
1 tbsp ghee or coconut oil (or cooking oil of choice)
Chop all vegetables evenly (diced).
Heat a pan on medium heat. Add cooking oil of choice and saute onions until browned. Then add tomatoes and all spices (garlic, ginger, spices) and continue to saute. Cook until tomatoes begin to wilt. Then add peppers and cook everything until cooked well.
Reduce heat to low-medium. Create divots in the vegetable mix and crack eggs into those. Add a little salt and pepper onto eggs. Cover pan with lid and cook until settled to your consistency (poached, although some may like over-medium or over-hard).
Garnish with cilantro and serve hot!
