Cumin & Smoked Paprika Zucchini Fries with Yogurt Dipping Sauce

Ingredients:

  • 6 medium to large zucchinis

  • 1 tsp cumin

  • 1/2 tsp coriander

  • 1/2-1 tsp smoked paprika (depending on your spice tolerance!)

  • 1 egg (omit if vegan - both recipes below)

  • 1/2 tsp pink or sea salt

  • 1/2 cup of almond flour (I use Bob’s Red Mill brand)

  • 2 tbsp olive oil

Instructions with egg:

  1. Wash and dry the zucchinis thoroughly. They should not have any water on them!

  2. Preheat oven to 400 degrees F

  3. Cut zucchini’s into strips that are 2 inches in length, and 1/4 inch in width. Make sure they are this thin otherwise they will not get crispy!

  4. Crack one egg into a bowl and beat thoroughly.

  5. Place Bob’s Red Mill Almond flour in a bowl and combine with spices so it is evenly mixed.

  6. Place zucchini pieces into egg wash one at a time, and then coat them in almond flour.

  7. Lay on a baking sheet lined with parchment paper. Make sure they have room so you may need two baking sheets.

  8. Place in oven for 50-60 minutes, flipping half way.

  9. Serve hot with yogurt dipping sauce, tzatziki sauce, or ketchup!

Instructions without Egg:

  1. Wash and dry the zucchinis thoroughly. They should not have any water on them!

  2. Preheat oven to 400 degrees F.

  3. Cut zucchinis into strips that are 2 inches in length, and 1/4 inch in width. Make sure they are this thin otherwise they will not get crispy!

  4. Place zucchini pieces onto baking sheet lined with parchment paper. Make sure they have room so you may need two baking sheets.

  5. Massage olive oil, spices, and salt into zucchini pieces.

  6. Sprinkle 1/2 cup of almond flour on zucchini pieces.

  7. Place in oven for 50-60 minutes, flipping half way.

  8. Serve hot with yogurt dipping sauce (instructions below), tzatziki sauce or ketchup!

For Yogurt Dipping Sauce:

  1. Take 2 cups of Siggi’s plain strained icelandic yogurt and mix with 1 tbsp of grated garlic, 1 tbsp of lemon juice, and salt and pepper to taste.
